As someone who cooks in our RV often, I love when I find a tried and true recipe that’s easy for cooking in the RV.

Easy One-Pot Meal Ideas
Minimizing clean-up is crucial to me when cooking in the RV. There is no dishwasher… rather I AM the dishwasher. So if there is a big mess to clean up after cooking, then forget it.
I love one-pot (or one-pan) meals because that means at the end of the night I’m not having to scrape and clean off 3 different pots. So, as I have searched and built up my camping meal list, here are a couple of my all-time faves.
The Skinnyish Dish- One Pot Chicken Con Broccoli
This one is a favorite. It always comes out great and it’s always devoured by my family. The entire thing is done in one big pot and it makes my life so much easier. Star, the food blogger who posted this recipe is awesome. She has tons of great meal ideas. I’ve been going to her page for years and I have tried many of her recipes.
Kroll’s Korner- One Pan Mediterranean Chicken and Rice
Tawnie has so many great recipes, many of which I come back to often. This Mediterranean Chicken and Rice was a meal I tried on our last camping trip and it’s absolutely on my easy RV meal list! Everyone loved it. It’s recommended to be done in one cast-iron skillet, but if you don’t have one it’s easy to transfer everything to oven-safe cookware.

Simple Instant Pot RV Meals
The Skinnish Dish- Shredded Chicken in the Instant Pot
Star from The Skinnish Dish is at it again with a great seasoning mixture for her shredded chicken! This is something I use my Instant Pot for once a week. Putting together a couple of chicken breasts along with some chicken broth and my favorite seasoning. I use shredded chicken for salads, quesadillas or to have on hand for other recipes (like a quick chicken alfredo, or taco soup!)
Home Ec@Home-Slow Cooker Chicken Tortilla Soup
Speaking of Taco Soup, this is a great one to throw into the Instant Pot. Literally, dump all the ingredients in and forget it until dinner time! I have used this tortilla soup recipe for years and it’s never failed. I can also split it up and freeze half of it so that nothing goes to waste! The best thing? Only ONE pot to clean!

Sheet Pan Recipies, the Ultimate Easy RV Meal
Kroll’s Korner- Sheet Pan Chicken and Veggies
There are so many variations of sheet pan meal ideas out there. You can go as simple as chopping up your favorite veggies and putting seasoned meat on your pan and into the oven. However, if you wanna spice it up, we’ve loved this recipe from Kroll’s Korner for Sheet Pan Veggies. I love that it’s an entire meal, sides and all on one pan and into the oven. So simple and mess-free!
Easy RV Barbeque Meal Ideas
Last, but certainly not least, the BBQ! When all else fails, throw on some chicken thighs, steaks, salmon, etc. on the BBQ and keep your kitchen clean.
My favorite is BBQ chicken thighs and skewers of veggies. Sometimes we chop up a big reg bell pepper into large chunks with olive oil and throw it on the BBQ next to the meat. Super easy and keeps the mess outside and not in the kitchen.
Love this! I really love that a lot of the recipes are one pot meals! I like easy and quick clean up meals in my house, let alone traveling in an RV 😂
